For over thirty years we have produced the best wood-burning ovens. Only the very finest Italian workmanship and first rate materials are used in each of our wood burning ovens and barbecues. Wood, a natural source of heat, is the key component to exalting the flavour of food and maintaining intact nutritional properties. Indirect cooking ensures low wood consumption with a significant reduction in CO2 emissions. Moreover, smoke never enters the cooking chamber, and hence does not deposit on food and does not alter flavours.
All COMAP ovens have a 3mm double vaulted cooking chamber with rock wool insulation which ensures a constant transmission of heat inside the chamber. This allows for all food to be baked uniformly and reduces firewood consumption. It takes just 3 Kgs of wood to reach the desired temperature and a further 1 Kg of wood per hour to maintain temperature.
